National Frozen Food Day | Meatloaf, Mashed Potatoes, Green Beans Dinner
I’m very excited for this food holiday. It’s a complete meal that just reminds me of home.
National Frozen Food Day is celebrated in a different way in my house today. How about homemade meatloaf, homemade mashed potatoes, and homemade green beans, but just placed in a frozen food container? To me, meatloaf with these sides is just a classic frozen food combination. Even better that my mom’s meatloaf is my favorite. I remember getting so excited for meatloaf in our home when I was younger, and I just had to have the part with the hardboiled egg. Top with tomato or BBQ sauce, it’s no matter to me. It’s delicious either way.
For the mashed potatoes, I went simple. I usually make garlic mashed potatoes, and those are my absolute favorite, but do you ever find incredibly flavorful mashed potatoes in a frozen food meal? No. So, although it’s still tasty and creamy, traditional mashed potatoes it was for this day. The green beans are fresh and just roasted with olive oil, salt, and pepper.
I really loved making this and enjoying it later. It’s just a nice meal!
What is your favorite frozen food combination?
- [b]Meatloaf[/b]
- 1 1/2 pounds lean ground beef
- 1 large egg + 1 hardboiled egg
- 1/4 cup chopped onion
- 1 tsp each dried oregano, basil, Italian seasoning, or to taste
- Salt and pepper, to taste
- Tomato or BBQ sauce for topping (I used BBQ)
- [b]Mashed Potatoes[/b]
- 4 Idaho potatoes, peeled and diced
- 3 tbsp unsalted butter
- Splash of heavy whipping cream
- Salt and pepper, to taste
- [b]Green Beans[/b]
- 1/2 bag of fresh green beans
- Olive oil
- Salt and pepper, to taste
- Sprinkle of fresh Parmesan cheese.
- Preheat oven to 350*F. Mix together all ingredients except for hardboiled egg and place in a loaf pan. Insert hardboiled egg in the center of the meatloaf.
- Cover the entire loaf with tomato sauce or BBQ sauce (I used BBQ) and bake for 1 hour.
- Cook diced potatoes in a pot of boiling water until done. Add to bowl of stand mixer and combine with other ingredients. Add more butter or cream to reach desired consistency and taste.
- Preheat oven to 350*F.
- Add green beans to baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Mix with your hands.
- Bake for 10 minutes. Sprinkle with Parmesan cheese and bake an additional 5 minutes, or until you reach desired tenderness.
