National Chocolate Day | Chocolate Muffins for 2

I think when 2014 is over, I’m going to spend the entirety of 2015 not cooking anything with chocolate. Something with chocolate creeps up in the calendar more often than I would like, but with that being said, these chocolate muffins…well, I could get used to these. Next time, I would use mini chocolate chips so I’m not getting a hunk of chocolate with every bite, but the muffin itself is fantastic.

This is all due, of course, to Sally from Sally’s Baking Addiction. That girl clearly knows how to bake. I’ve seen many “baking” blogs that are accomplished in one thing: driving me to quickly exit the website. But Sally is my go-to baking gal. As I mentioned in the previous post for the single-serving thyme pretzel recipe, I love to make things for one or two people. It minimizes the amount of grocery spend I go through, the amount of food that has the potential of being wasted, and most importantly, greatly reduces the amount of time I spend in the kitchen, which is perfectly for when you have multiple recipes to complete in a day like I so often do.

Plus, baking is so not my forte. And this challenge isn’t so much about creating new recipes for every food holiday – that would be quite the challenge that I’m just not ready for yet – but it’s about just challenging myself to learn how to cook new things, drive my mind to think outside the box for current and future meals. Instead of Sally’s single-serving chocolate chip muffin, I just doubled the recipe and made two, one for me and one for my mom, the biggest chocolate-head I know.

Chocolate Muffins for 2

Ingredients:

  • 6 Tbsp white whole wheat flour (or all-purpose flour)
  • 1/2 tsp baking powder
  • Dash of salt
  • 3 Tbsp semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 2 Tbsp butter
  • 2 Tbsp + 2 tsp milk
  • 2 Tbsp sugar

Directions:

  1. Preheat oven to 350*. Line 2 slots in the muffin tray with 1 liner. Set aside.
  2. In a small bowl, mix together flour, baking powder, salt, and chocolate chips. Add vanilla, melted butter, milk, and sugar. Mix everything together until just combined, and be careful not to over mix.
  3. Pour batter into prepared muffin liners. Bake for 17 minutes or until a toothpick inserted in the center comes out clean.
