National Penuche Fudge Day | Penuche Fudge
There’s never anything wrong with some fudge. I love the smell, too! Whenever I go to a theme park, I’ll walk by the candy store and just watch the fudge being made, sniffing the air like the best hound dog would.
So, what is penuche fudge? I have an answer for you, but only because I had to look it up when I saw this food on the national food holiday list. It’s fudge with no flavorings except for vanilla. It’s reminiscent of caramel because you make penuche fudge by caramelizing brown sugar. Let me just say it’s one of my favorite fudges ever. And, mind you, I’ve had a lot of fudge in my day.

National Penuche Fudge Day | Penuche Fudge
Ingredients:
- 2 1/2 cups brown sugar
- 2 1/2 cups granulated sugar
- 1 1/4 cup milk
- 1/2 cup unsalted butter
- 3/4 tsp salt
- 1 tsp vanilla
- 1/2 cup toasted pecans
Directions:
- Line a 8x8 square baking pan with parchment paper.
- In a medium saucepan, heat both sugars, milk, butter, and salt to 240*F.
- Pour the fudge mixture into the bowl of a stand mixer. Beat for 2-4 minutes, or until thick and smooth.
- Lower the speed, add vanilla and pecans and mix until incorporated.
- Pour fudge batter into pan and refrigerate for 30 minutes, or until no longer runny.
