National Blonde Brownie Day | Reese’s Pieces Blonde Brownies

I am not a baker. When we have gatherings at my friend’s house (because there is always one friend in the bunch who hosts every single time), I bring the Spinach Dip that I learned from my mom. It’s my go-to and very popular so I never have the need to try for anything else. It’s also cheap so I get away with barely doing any work and barely spending any money for the dish.

But, I’m getting distracted. As I was saying, I’m not a baker. Baking is a science filled with precise measurements and honestly, I’m a sloppy cook. I throw in some of that and toss in a pinch of this. I make a wreck of my kitchen because I’m usually trying to do a million things at once. Baking is not for the distracted or those who can’t help but multitask in everything that they do. I’m really quite irritating.

Anyway, when it comes to baking, I defer to family and friends. For this recipe, I turned to my best friend and soul sister, Jackie. Jackie is the one responsible for baked goods at gatherings with friends. At our most recent one, she brought a batch of these blonde brownies and within the first 15 minutes, they were gone.

I promise that you won’t be disappointed in these squares of goodness. The Reese’s Pieces add a peanut butter element to the brownies and I love the crunch from those placed on top. Enjoy them fresh from the oven with a dollop of ice cream.

Reese’s Pieces Blonde Brownies

Ingredients
  • 1 cup light brown sugar
  • 1 large egg
  • 1 1/2 tsp vanilla
  • 8 tbsp unsalted butter (melted)
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 cup Reese’s Pieces
Instructions
  1. Preheat oven to 325 degrees. Spray 8×8 baking dish with cooking spray.
  2. In a bowl, mix beat brown sugar and egg together until light and fluffy, about 2 minutes.
  3. Add the vanilla and melted butter and mix to just combined.
  4. In a separate bowl, whisk flour,baking soda and salt. Add the mixture to the butter/sugar mixture and slowly mix to combine.
  5. Mix in 1/2 cup Reese’s Pieces and then pour in prepared pan, smoothing with spatula.
  6. Sprinkle the remaining Reese’s Pieces evenly over the top and bake until the top is light golden brown, 25 minutes. Cool and cut into squares.

It’s funny that some people really can’t handle baking. I have a friend who is a fantastic cook, but because she cooks by instinct she can’t follow directions for baking! Anyway, these look great!

These look delicious! I’ll have to try mine with Reeses, I LOVE peanut butter. I don’t consider myself a baker. I like the free-form of cooking but over the years have gotten better at baking…and soooo enjoy the results 🙂
