Meal Plan // Week of June 3
I took to Instagram to ask what recipes you wanted to see in the meal plan. And you guys delivered! So I’m going to deliver. Because you all deserve it. I had requests for grilling recipes, low-carb, vegetarian and I’m happy to say that I have a really great combination of all of these.
I also received some requests for Instant Pot recipes, but I’m going to say those for next time. I’m thinking I may only cook Instant Pot recipes the week of June 10, what do you think?
And, I have a brand new salad recipe that I’ll be composing this week too. I haven’t put it up on this ol’ blog yet, but it’s inspired by some of my favorite chefs in Tampa Bay. It’s a harvest salad, made with quinoa, pickled radishes, roasted brussels sprouts, and more, topped with a champagne vinaigrette.
Anyway, I’m super stoked to be cooking these recipes alongside you all. I hope you enjoy them!

The BEST Fried Rice!
MONDAY - I have made this before and it's definitely the BEST fried rice. So simple and bonus, it's vegetarian!
Easy Sheet Pan Dinner: Mini Meatloaves with Spinach and Veggies (Gluten-Free Option)
TUESDAY - I love meatloaf and my bread/meatloaf pan recently broke so this is right up my alley and something I'm really excited for. I'll be using ground turkey.
Lemongrass Chicken Salad
WEDNESDAY - Satisfies the grilling requests. There's something about the summer. Truth be told, I don't own a grill (v sad) so I will be grilling indoors on the best cast iron grill pan in the world. You'll want to go out and buy it right away.
Potato Leek Soup
THURSDAY - Sure, it may be hot as well outside, but that doesn't stop me from eating soup. Really, if it stopped any of us Floridians from eating soup, we'd never ever do it. We've learned to love soup even during the hottest months of the year.
