National Peanut Cluster Day | Homemade PayDay Bars
If I was able to eat a PayDay every day without gaining weight or feeling sick, I would. This was my favorite candy bar when I was little, until I upgraded to Heath Bars. There were two things I always wanted to get from the checkout line at the grocery store when I went with mom- a PayDay and an Archie comic. $2 was all it took to make me the happiest little girl in the world. There were even times I shared my PayDay with dad because it’s one of his favorites too.
Even so, I can’t take responsibility for the idea to make these for National Peanut Cluster Day. My husband, with his new title of Director of Inspiration, came up with the idea. I about flipped because I thought it was just the greatest idea in the history of, well, EVER.
To make homemade PayDays it only takes butter, marshmallows, peanut butter chips, peanuts, condensed milk, and an appetite for greatness.
Sometimes during these food holidays you just have to go simple. I started out with the idea that every single recipe would be 1,000% unique, and super impressive and creative, to boot. Quite honestly, it’s very hard to do that. And then I thought about all the recipes I’ve followed in the past and how the ones I love the most are the ones that are simple, easy, and don’t require too many ingredients or an inordinate amount of time to make. While I appreciate the labors of an elaborate dish, more often than not, I’m looking for ways to scale back and take less time in the kitchen, and more time eating the meal with those I’m sharing with.
I hope these bars do the same for you.
- 1 (16 ounce) jar lightly roasted peanuts
- 4 tbsp (1/2 stick) unsalted butter
- 1 cup mini marshmallows
- 1/2 package peanut butter chips
- 7 ounces (1/2 a can) sweetened condensed milk
- Grease an 8″ round cake pan. Layer the bottom of the pan with 1/2 the jar of peanuts. In a medium sauce pan, melt butter and marshmallows together.
- Add peanut butter chips and condensed milk, stirring until completely melted.
- Pour mixture evenly over the layer of peanut. Top with the other half of the peanuts, press with your fingers, and allow to set in the fridge until firm.
