On the page before the Table of Contents of this book, it says, “Happiness is rainbow sprinkles”.

Finally, someone gets that and that someone is new cookbook author Jackie Alpers with the release of Sprinkles!: Recipes and Ideas for Rainbowlicious Desserts.

Ever since I can remember, and even now during my froyo breaks to beat that 3 o’clock feeling, I smother my vanilla ice cream with rainbow sprinkles (and sometimes, strawberries with strawberry syrup). I won’t even entertain an ice cream date if we are going somewhere without rainbow sprinkles. To me, they are what makes the ice cream and now I have an entire cookbook dedicated to the most colorful and fun decorations ever.

When I received this book in the mail, I immediately thumbed through it and saw everything that Sprinkles! has to offer. Ultimately, I decided to make the Confetti Popcorn Cake shown below and it was magical, but in going through the book, I was in love with the pictures and unique, fun recipes Jackie created.

This cookbook is broken down into:

Plus, there is a guide to identifying different sprinkles, sprinkling methods, and even instructions for how to grow your own rock candy in a jar! (You are just going to have to buy the book to see that one.)

Jackie Alpers has done a phenomenal job on every page of this book and  I can’t wait until her next one.

It wasn’t easy to pick the Confetti Popcorn Cake recipe as the one to make for this review. This was because I started browsing the cookbook knowing that my time was limited and that I wanted a recipe that wouldn’t take me all day in my kitchen. (I should probably note that I’m not a very efficient baker either.)

But, I found so many quick recipes in Sprinkles! that I ended up spending more time deciding which to go with than I did actually making this fun snack from beginning to end.

The ingredients are easily found in any grocery store, it’s no bake, minimal kitchen equipment required, it’s colorful, and- turns out- a perfect movie snack. I made this yesterday morning and then cut it up, packed it in baggies, and brought it with me to see Catching Fire.

It has the texture of rice krispies treats, but with a little bit more crunch from the pretzels and candies. It would be so perfect for a children’s birthday party, holiday get together, or any other fun event!

Sprinkles!: Recipes and Ideas for Rainbowlicious Desserts (Review and Recipe)

Serves: 1 cake
Ingredients
  • 8 cups popped popcorn (2 bags of microwave popcorn or about 1/3 cup of kernels)
  • 1 1/2 cups pretzels (mini pretzels left whole or broken into pieces)
  • 1 cup shelled, roasted peanuts (optional)
  • 2 cups M&M candies, plus more for decorating
  • 1/4 cup rainbow jimmies, plus more for decorating
  • Candy dots for decorating
  • 1 (16 oz) bag mini marshmallows (about 8 cups)
  • 1/2 cup (1 stick) unsalted butter
Instructions
  1. Coat a 10-inch Bundt pan with cooking spray.
  2. Place large dot sprinkles in a circle around the bottom of the pan, then sprinkle in 2 tbsp of rainbow sprinkles, so that when the cake is unmolded, the extra embellishments are on top.
  3. In a large heatproof bowl, stir to combine popcorn, pretzels, peanuts, candies and sprinkles.
  4. Melt butter in a large saucepan over low heat, stirring occasionally. Add marshmallows and stir until smooth and full incorporated. Gently pour marshmallows mixture over popcorn mixture; stir or mix with clean hands to coat.
  5. Press marshmallow-coated popcorn mixture into prepared pan. Cover and let set at room temperature for at least 1 hour.
  6. Run a butter knife around the sides of the pan to loosen cake. Invert pan onto a serving platter to remove cake. Cut into pieces with a large serrated bread knife.

I have never seen so much rainbowness in one recipe before, I think I’ll have to track down a copy of this cookbook somewhere. And this recipe looks so easy!
