National Apple Betty Day | “Bam-A-Lam” Rockin’ Apple Betty

Have you heard the song “Black Betty” by Ram Jam? Here [4] is the video if you would like to check it out. I recommend this.

Anyway, for some reason, this song has become popular in my house and among friends. It’s fun and catchy and was the first thing I thought about when I saw Apple Betty on the National Food Holiday calendar for today.

I didn’t even know what an Apple Betty was, but it seemed simple enough after looking up how it’s traditionally made. However, I had just completed my Apple Turnovers [6] and had some left over apples and that’s how I decided to make this Apple Betty.

And because “Apple Betty” doesn’t even sound exciting, I decided to pay homage to the Black Betty song and name my Apple Betty version “Bam-A-Lam” Rockin’ Apple Betty. Much more fun. About as much fun as I had eating it as a late night snack.

"Bam-A-Lam" Rockin' Apple Betty

Ingredients:

  • 1 tbsp lemon juice
  • 2 cups water
  • 2 Granny Smith apples - peeled, cored, sliced
  • 1 tbsp butter
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tbsp cornstarch
  • 1/2 tbsp water
  • 6 slices of bread (I used wheat), cubed
  • 1 1/2 cup of brown sugar
  • 4 tbsp butter, sliced
  • 4 tbsp water

Directions:

  1. Preheat oven to 375*F.
  2. Combine the lemon juice and 2 cups of water in a bowl. Place sliced apples in the water so they don't brown.
  3. Melt 1 tbsp butter over medium heat. Drain water from apples and cook them in the skillet for a couple of minutes, adding 1/2 cup brown sugar and ground cinnamon, and cooking for 2 minutes.
  4. In a separate bowl, stir together cornstarch and 1/2 tbsp of water. Pour this mixture into the skillet, and mix well.
  5. Transfer skillet ingredients into 9x13 inch baking dish. Bake, covered in foil, for 25 minutes. Meanwhile, combine bread, brown sugar, butter and water in a large bowl. Pour bread mixture on top of baking dish ingredients and bake another 20-25 minutes, uncovered. If the bread topping starts to get too browned, cover again with foil. Bake until apples are tender.

DID YOU KNOW: An Apple Betty is both like a bread pudding and a cobbler, which basically means it’s amazing. In looking for inspiration, many recipes used lemon juice, and some used apple cider, both of which, I’m sure, are delicious. Apples are at season’s peak in late October and early November so plan on making this Apple Brown Betty when apples are at their best.
