We all have them. Those foods that evoke such nostalgia that it hits you in the face like a boulder. A good ol’ bologna sandwich is that for me. Let me tell you – my grandfather made the best bologna sandwiches ever. Did he add anything crazy or fancy? Of course not. It was just white bread, mayonnaise, bologna, and sometimes, a slice of yellow american cheese.
My maternal grandfather didn’t really cook, but he made amazing omelets and sandwiches. Up until he passed away, he was still making those two items that I loved from the first bite. I’ve tried to make the same bologna sandwich, but something isn’t quite right. Maybe I use different mayonnaise, maybe I use a bologna made from a different “meat”, but I think it’s just that it isn’t made from his hands.
Either way, you’ll find me buying bologna every once in a while, although usually I’ll eat a couple of sandwiches and then the unused bologna has lost its appeal. For National Bologna Day, I made it a grilled sandwich with pepperjack cheese. It’s not my grandfather’s bologna sandwich, but it’ll do.
