Happy National Chocolate Soufflé Day! It’s also National Chili Day (you can find a spicy white chili recipe here) so between the two, you have dinner and dessert. You’re welcome. 

So, I have to admit that I’m not totally into this recipe, but you will be. It’s such a strong chocolate flavor, and being that I’m not a chocolate fan, I had to douse it in caramel sauce to get through. It’s a solid recipe and I wish I loved chocolate more. Gahhhhhh.

I really think I’d love a caramel soufflé. Ooo, that sounds good. Caramel Soufflé with caramel sauce. You can’t have too much caramel.

Anyway, i’m getting distracted. It’s Friday, which means that the weekend is upon us and National Fruit Compote Day is tomorrow, a dish that I’m so excited to share with you all.

National Chocolate Souffle Day | Chocolate Souffle with Salted Caramel Sauce

Ingredients
  • 3 tbsp butter
  • Cocoa powder
  • 2 oz chocolate, melted
  • 1 tsp vanilla extract
  • 2 egg yolks
  • 2 egg whites
  • 2 tbsp sugar
  • Pinch of salt
  • Pinch of cream of tartar
  • Pinch of cinnamon
  • Confectioners’ sugar

Instructions
  1. Preheat oven to 375*F. Grease two ramekins with butter and some cocoa powder.
  2. In a double boiler, melt chocolate and butter. Remove from heat and stir in vanilla extract. Whisk in egg yolks, one at a time.
  3. In a separate bowl, beat egg whites for about 3 minutes. Add sugar, 1 tbsp at a time, beating again after each addition. Add salt, cream of tartar, and cinnamon and mix again. Fold egg whites mixture into chocolate mixture. Spoon into ramekins.
  4. Bake 20 mins. Sift with confectioners’ sugar and drizzle with [url href=”http://sallysbakingaddiction.com/homemade-salted-caramel-recipe/”]Homemade Salted Caramel Sauce[/url] (optional). Serve immediately.
