Days 9 & 10 Recap of the BuzzFeed Clean Eating Challenge

You guys, you guys, you guys. By the time you read this, I’m on Day 11 of the BuzzFeed Clean Eating Challenge! I feel AWESOME, and so motivated to continue this (just with some pizza and french fries sneaking in every once in a while). I encourage you, my lovely reader, to this is challenge out and if you are already, keep with it! Also, tell me how you’re doing. 🙂

Here’s how days 9 and 10 went:

Day 9: Monday Breakfast
Sweet & Savory Apple Omelet

Sweet & Savory Apple Omelet

Okay so I really enjoyed this breakfast! The recipe doesn’t call for it, but I sprinkled cinnamon on top and I loved it. I used Macintosh apples which are the best apples ever, FYI. And being full until lunch is always a good thing. Wahoo!

Day 9: Monday Lunch
Raw Collard Wraps with Turkey Meatballs, Avocado, and Dijon

So I thought I ran out of meatballs, but really, there were three left. However, I just didn’t feel like eating raw collard wraps so instead I had leftover turkey chili (my own recipe) and the three turkey meatballs. I didn’t even finish it because I got so full!

Am convinced my stomach is shrinking.

I still want pizza.

Day 9: Monday Snack
Blackberries with Greek Yogurt

Psh, yeah right. I swore off Greek yogurt, remember? So I had some strawberries and blueberries, and then I relapsed and had a single caramel wafer. Whoopsies.

Day 9: Monday Dinner
Fried Quinoa with Snap Peas, Mushrooms, and Scrambled Eggs

The BuzzFeed Clean Eating Challenge says you can eat out and if you do, get stir-fry. So I did…with udon noodles, which I’m not sure is allowed or not, but I had this dish from a restaurant (and owners/chefs) I really respect and who use great ingredients.

Day 9: Monday Night Snack
Pear with Almond Butter

Didn’t need a snack after my udon adventures.

Day 10: Tuesday Breakfast
Cauliflower Hash with Fried Eggs

Cauliflower Hash with Fried Eggs

Funny thing is I always preferred broccoli over cauliflower, but with my frequent roasting during this challenge, I’m enjoying cauliflower more and more. Makes me wonder, though, why not broccoli? There’s no broccoli anywhere in this challenge; isn’t it just as good as cauliflower? Let me know, people! Do you know something I don’t?

Day 10: Tuesday Lunch
Arugula Salad with Eggplant, Avocado, Feta, and Chickpeas

Arugula Salad with Eggplant, Avocado, Feta, and Chickpeas

Oh yes, great lunch. Sometimes I just have an arugula salad by itself! So peppery and wonderful. I was completely satisfied by this lunch and will totally make it in the future. Leftover roasted veggies, even tossed in a salad, are wonderful.

Day 10: Tuesday Snack
Red Bell Pepper with Hummus

I really detest bell peppers that are even the least bit raw. I chose carrots instead and then got so busy with work, I didn’t even finish this snack. By the time dinner came around, I was a little hungry, but it wasn’t too bad.

Ah-ha!!! Here we go, this is what I mean, people! I adore shrimpies!!! And I was really weirdly excited to get some in my gullet. This entire dinner was a success! I didn’t necessarily need a snack, but I had one anyway.

Day 10: Tuesday Night Snack
Blackberries

Not feeling it. I just really wanted some clementines so that’s what I had. 😉

You did ittttt!!! I love broccoli, but tolerate cauli. I’m curious about a cauliflower hash, though!
